Dingle Distillery is one of the leading new wave distilleries in Ireland. It was the first new craft distillery to open during the recent renaissance in Irish distilling and has gathered a huge army of fans.
Based in the town of Dingle on the Dingle peninsula, in the far southwest of the country, it is an established and respected whisky maker.
This small batch single pot still whiskey series has produced some fantastic bottlings and this fifth edition is no different. Matured in bourbon PX and Madeira casks, it’s bottled at 46.5%.
Single pot still whiskey is an alternative Irish whiskey style that uses a combination of malted and unmalted barley. The malted barley component is usually around 50% and the unmalted element can contain other grains such as rye and wheat, although this bottling sticks to a mixed-barley mash.
Tasting notes
Aroma
On the nose of the Dingle Single Pot Still Batch 5 you’ll find the scent of freshly baked cinnamon bagels, dried raspberries, vanilla, butter mints and leather notes.
Taste
The palate delivers lots of soft wood from the bourbon casks resulting in Dingle spice and salted caramel wrapped up in a rich smooth whiskey.
Finish
This single pot still has a medium finish with notes of flaked almonds, white chocolate and lots of creamy spice.
Dingle whiskey has become known for its fine production standards and this Dingle fifth single pot still bottling continues that tradition, wrapping its trio of cask types into a superb bottling. Alongside this pot still the distillery also produces a single malt series as well as many once-off bottlings.
Their Wheel of the Year series is an 18-month experiment in small batch bottlings that include single pot still and single malt releases, each tuned to a particular segment of the Celtic year. Dingle Single pot still whiskey plays a big part in that series.
Bourbon casks
Bourbon casks are the starting point of all the Dingle Distillery releases but they are then married or finished with a diverse range of cask types, resulting in an Irish whiskey that is known for its Dingle spice and leather notes.
The flavour and aroma notes in this Dingle single pot still batch 5 – particularly the flaked almonds, butter mints, white chocolate, soft wood and dried raspberries – are unusual for a small batch single pot still Irish whiskey but blend remarkably well.
