There are six bottles in the Redbreast flock: the Redbreast 12 year old, Redbreast cask strength 12 year old, Redbreast 15 year old, Redbreast 21 year old, Redbreast 22 year old, a Redbreast 27 year old and a collaboration with the Lustau bodegas in Spain called the Redbreast Lustau Edition.
Redbreast 12 is a superb single pot still whiskey that currently holds the unofficial title of the world’s best single pot still, due to popularity among fans around the world.
Distilled in copper pot stills at the Midleton Distillery in Co Cork, it is the largest selling single pot whiskey and has a quintessential style that has come to define the category.
Single Pot Still Irish whiskey is made from a mash of malted and unmalted barley. This defines its flavour, creating a markedly distinct whiskey category that stands shoulder-to-shoulder with single malt whiskey. The pot still whiskey category is native to Ireland.
It is one of the most accessible whiskey styles and is growing in popularity all over the world.
Redbreast 12 is triple distilled. In common with a lot of Irish whiskies, all the Redbreast family are triple distilled pot still whiskies. The triple distillation adds a smoothness and a flavour profile that is often absent from double-distilled whiskey.
Not all Irish whiskey is triple distilled but it is a common characteristic of the regional profile.
Redbreast Irish whiskey offers a complex spicy whiskey with lots of toasted wood notes, a fruity aroma, succulent exotic fruit on the palate, and a harmonious balance from using bourbon and olorosso casks.
All the Redbreast family use versions of this cask combination to create the rich and luscious fruit flavours of the whiskey with a small number using additional casks, such as port.
The official tasting notes herald a complex and spicy aroma with toasted wood notes evident. The palate is complex and full-flavoured with fruity, spicy and sherried notes. The finish is decidedly long, where complex flavours linger well after the sip.
Redbreast 12 is often chosen ahead of its siblings simply because it is such a familiar and affordable whiskey. It is often the first bottle in the range that a whiskey fan will try and consequently, people often develop a very close bond with the Redbreast 12 bottle in particular.
Choosing between it and a Redbreast 15, for example, is often a matter of personal choice. Both whiskies are matured in ex-bourbon and sherry casks but the extra three years in a cask that a Redbreast 15 receives gives it an additional smoothness and pot-still character that fans of the 15-year-old definitely miss in the 12-year-old.
However, Redbreast 12 remains popular and a firm favorite even if you come to enjoy the 15-year-0ld more frequently.
Redbreast 12 is known for its silky smooth texture. This is a product of the single pot still mashbill of malted and unmalted barley. It carries a complex spicy character that is distinctive to the single pot still Irish category. The toasted notes element goes a long way to defining the personality of this single pot still whiskey as well as the harmonious balance of the oloroso casks and the ex-bourbon.
The chemistry that occurs within the traditional copper pot stills is unfamiliar to many fans but the resulting output of pot still Irish whiskey with its distinctive qualities of a fruity aroma and toasted oak layers is superb.
