Redbreast 12 is Ireland’s most famous single pot still whiskey. Triple-distilled and matured in ex-bourbon and oloroso sherry casks for at least 12 years, it’s a wonderfully smooth and flavour-packed pour that’s loaded with personality.
The rich, smooth body of Redbreast 12 is the first sign that this is a whiskey of exemplary character. Aged in oak for a minimum of 12 years, it’s layered with dark fruit, rich vanilla and black pepper spice, creating the quintessential single pot still whiskey. Its triple distillation, partnered with a mash bill of malted and unmalted barley, has created a world-beating whiskey, the first in a long family line of Redbreast releases.
As a single pot still whiskey, Redbreast 12 represents the very best of Irish distillation. Made from a combination of 50% malted and 50% unmalted barley, Redbreast 12 is the first in a multi-award-winning family of 11 different bottlings. Each is distinctly different from the next, and each has its own fans, but the 12-year-old is special to everyone. As the entry-level release, it’s often the first Redbreast people meet and consequently remains a long-term fan favourite.
This is an exemplary pour with a great flavour profile. Rich and full-bodied, but with a low ABV, it’s considered to be one of the most pleasurable Irish whiskies.
The aroma of this fine single pot still is laden with red fruit notes, vanilla, and oak spice. It’s richly warming and deeply layered.
The fruit-forward element continues on the palate, with a layer of cream that rounds out the flavours, creating a wonderful balance of spicy fruit, black pepper, toasted nuts and oak.
This is a long-finish whiskey that coats the throat with honeyed cream, fruit and cracked black pepper.
Redbreast 12 is a full-bodied, silky-smooth single pot still, with an orange-gold colour and a wonderfully rich, oily texture.
Redbreast 12 pairs beautifully with dark chocolate, roasted and salted nuts, rich meats and decadent desserts.
There are 11 distinctly different bottles in the Redbreast family lineup, so there’s lots to choose from, but if you’d like to step outside the range then you could try Green Spot, a 10-year-old single pot still.
Drumshanbo Tawny Port Cask is a little younger at seven years of age but an equally flavour-packed single pot still matured in tawny port. It also uses Barra oats in its mash bill, boosting the creaminess of this terrific pour.
A Redbreast fan will love Bushmills 12 – a single malt that’s been triple casked in ex-bourbon, oloroso and marsala wine casks.
This is a whiskey that deserves to be enjoyed neat but can also handle a single cube of ice. It’s a warming pour that is perfect for a cold winter’s night by the fire or at the bar of your favourite Irish pub.
No. Redbreast 12-year-old is a single pot still. This is a style of whiskey making that is indigenous to Ireland. Single malt is made using 100% malted barley. Single pot still is a combination of malted and unmalted barley as well as other grains such as oats. Redbreast 12 has a mash bill of 50% malted and 50% unmalted barley. It’s the unmalted element that gives the whiskey its black pepper spice and added creaminess. Unmalted barley is often referred to as green barley.
Redbreast 12 is made using two cask types: ex-bourbon American oak and oloroso sherry casks from Spain. After triple distillation, parcels of the spirit is matured in both oak types for 12 years and married in cask to create this fine single pot still whiskey.
Redbreast 12 is made in the Midleton distillery in Co Cork. Owned by Irish Distillers, this is the country’s largest and most famous whiskey distillery and is also the home of Jameson, Powers and the Spot range of whiskies. Old Midleton Distillery opened in 1825 and the current modern Midelton Distillery and warehouses is adjacent to it.
Triple distillation is an essential part of the Irish whiskey-making process. While it is not mandatory to distil three times to make Irish whiskey, it is the most common distillation method in the country. In other countries, such as Scotland or Japan, whisky is usually only distilled twice.
Distillation occurs in copper pot stills and is designed to purify the spirit that goes on to be matured in cask to make whiskey. The journey the spirit takes through each of the three stills increasingly purifies it, making it smoother and sweeter with each distillation but also reduces its volume. Triple-distillation is more expensive and time-consuming but most Irish distillers prefer it as it creates a smoother, more easily drinkable and flavour-packed spirit.
No. Redbreast 12-year-old is bottled at 40% ABV (80 proof). However, there is a very popular 12-year-old cask strength version which is bottled at 57.5% (115 proof).
