In the backdrop of Unionhall, Co. Cork, three childhood companions – John, Ger, and Denis – embarked on a journey that birthed West Cork Distillery. Their humble beginnings saw the distillery’s inception within a room at the rear of Denis’ residence. Back in 2003, armed with two small stills procured from a schnapps producer in Switzerland, their vision began to take shape.
They remain at the helm and their creativity and determination continues to drive Irish Whiskey into a new era. A stronghold team of 140 supports the strong mission at West Cork Distillers on Marsh Road. Everyday, four truckloads of spring barley arrive at our distillery. Each truck contains 18 to 20 tons of barley and hails from local farms in Cork.
