The first thing you’ll notice about Bushmills 16 is its colour. It’s a rich ruby red that comes from its triple-casking in bourbon, oloroso and port pipes. The year spent marrying the bourbon and oloroso-matured whiskey in the port pipe has had the biggest influence on its appearance, transferring a beautiful vibrant hue to this elegant single malt.
Bushmills has three core single malts in its collection, the 10-, 16- and 21-year-old. Each of them has a distinct personality but the 16-year-old probably gets a little neglected in favour of its older sibling. There are lots of warming spices and rich syrupy elements in this bottling that reinforce its position as a whiskey of stature. It’s a complex release, with layers of flavour and texture derived from its 16 years in wood. Triple distilled as well as being triple-casked, no effort was spared in its production.
And you can taste the difference immediately. The oloroso provides lots of dry notes while the port brings in a special sweetness to bolster the bourbon sugars. At 40% Abv it’s eminently drinkable with lots of signature caramel, spice and cinnamon underpinning ripe summer fruits and toasted almonds. The finish delivers a silky chocolate mouthfeel that is completely satisfying. This is a Bushmills to savour.
