The Method and Madness brand is no stranger to surprising whiskey fans with their innovative cask types and multiple releases. This is an experimental whiskey producer, situated at the heart of Irish Distillers Midleton Distillery, that was created to explore where a young brand could go with Irish whiskey today.

The result is a series of superbly finished single pot still, grain and single malt whiskies that are hugely popular and have been on quite a journey.

This bottle's starring role comes from its finish in Japanese cedarwood casks. Initially matured in bourbon and sherry casks, they are finished in this Asian wood cask type to allow this limited edition single pot still to take on a personality and flavour profile all of its own.

Japanese cedarwood casks are relatively rare in Irish whiskey. The wood typically grows on the island of Yakushima and at altitudes of 500 metres or more and can live for 500 years or more. It is an incredibly robust wood that is tightly controlled by government regulation to ensure it is not over-used. In whiskey making it offers a sweet scented wood that reveals itself in the whiskey in one sip.

This is a single pot still Irish whiskey with notes of eucalyptus, fresh botanicals, balsamic undertones and caraway seeds. There are layers of herbal tea and delicate fruits in this complex whiskey that pays heed to its Irish and Japanese origins.

The official tasting notes for this wonderful pour reveal a rich and complex tasting experience for this limited edition single pot still Irish whiskey. Alongside the Japanese cedarwood casks, the Sherry casks play a big part too imparting lots of dark fruit and typical sherry notes in this Irish yet world whiskey.

Taste

The palate offers all the beautiful pot spice you would expect but wrapped up in clove spice, caraway seeds and herbal tea layers.

Finish

The finish is long and indulgent. It's packed with rich spices and delicate fruits with lots of vanilla and raisin from the bourbon and sherry casks.
