Building a series

The Macallan Double Cask range is a superb collection of fine single malts produced by one of the biggest names in world whisky. It’s a family of whiskies of different vintages, each matured in US and European oak casks. The bottles range in age from 12-, 15-, 18- to 30-year-old releases.

The Macallan 12 double cask is the entry-level release at 12 years old but is an incredibly rich and decadent whisky that is defined by its flavours of candied lemon and rich, warm fudge flavours.

On the palate you will receive an unmistakable sweetness with deliciously honeyed layers carrying raisins, creamy toffee apple, candied orange and gentle spice rounding out this distinctive single malt scotch whisky.

It has a classic Macallan style, with the distinctive American oak style finding a perfect balance alongside the European oak, both sherry seasoned casks. These combine to create a medium finish in this fully rounded single malt.

Classic whisky house

The Macallan 12 year old Double Cask is produced at the new Macallan distillery Easter Elchies estate near Craigellachie. This new distillery building was unveiled in 2019 after receiving a €140 million makeover. is now considered to be one of the most striking, architecturally-renowned whisky distilleries in the world.

Owned by the Edrington Group, it is one of the top-three-selling scotch whisky producers in Scotland each year with a luxury range of whisky releases. The Macallan Double Oak single malt whisky remains one of its top sellers and a great entry point to the brand.

Cask selection

Cask selection is a cornerstone of the brand’s production and its exemplary maturation process contributes massively to the whisky produced.

The brand considers that 80% of its characteristics and 100% of its colour comes from the wood they use. Consequently, huge resources are employed to source exceptional oak casks that can create the classic Macallan style.

The American oak used is sourced in Kentucky and Missouri while the European oak comes largely from Spain and the regions of Cantabria and Galicia. French Oak is also sourced from the French side of the Pyrenees.

They take this newly felled oak and air dry it to maximize the flavour compounds in the wood.

Typically, American oak contributes flavours such as vanilla, lemon citrus and coconut while European oak brings flavours like dried fruits, orange citrus and spices. The addition then of sherry seasoning to the casks allows these flavours to enhance and draws notes that include citrus balanced with raisins, distinctive aromas and creamy butterscotch layers.

The double wood range is a superb example of the perfect balance of the American oak maturation and the European wood spices.
