Highland Park Whisky

Welcome to a wild harmony.

Highland Park Whisky

We’ve been crafting our award-winning whisky at the Highland Park Distillery in Kirkwall, Orkney, since 1798. Age, experience and tradition may define our whisky but it’s Orkney that sets it apart. Something magic happens here and the result is the wild harmony of flavours found in our whisky.

Our Distillery

Far away in the storm-lashed Orkney Islands is the place where magic happens. Here, Highland Park Single Malt Scotch Whisky is made, in very much the same way as it was made over 220 years ago. We see our distillery as a living, breathing organic place and we are its custodians. Evolution takes time and we’ve plenty of that.

Our Five Keystones of Production

We’ve maintained the same five keystones of production since 1798. Each requires fierce determination, hard work and skill. Just the way we like it. Without them, our whisky wouldn’t be our whisky.

  • Hand turned floor malting – We’re one of only a handful of distilleries to still turn our malt by hand. It’s hard work yes, but we end justifies the means (and vice versa, when you think about it).

  • Aromatic peat from Hobbister Moor – The peat from Hobbister Moor, is rich in fragrant heather and is completely unique to Highland Park and vitally important to the unique flavour and character of our whisky – a critical strand of our DNA.

  • Sherry seasoned casks – Contribute up to 60% of our Whisk’s final flavour and 100% of its natural colour so we insist on the finest quality sherry seasoned oak casks for maturation, not just for finishing.

  • Cool maturation climate – We enjoy a curiously mild climate, tempered by the warming effect of the gulf stream, the temperature seldom drops below 2°c or above 16°c. Perfect for our whisky’s long, cool and evenly paced maturation in our sheltered island warehouses.

  • Cask harmonisation – While most distilleries see this process as an extravagance, for us it’s a necessity. For every batch of Highland Park released, Gordon Motion, our Master Whisky Maker, selects and marries up to 150 casks, leaving the newly combined whisky to rest for at least a month before bottling.
